Is he OK Angie? Sometimes I don't think those fences make a buzzing noise. They should have signs on them really; lettingyou know if there's electricity running through them or not.
Your cooking sounds delicious. Your other half must be made up with all that gorgeous food! As they say, 'good cooking is the way to a mans heart',(or something like that!)!

hes grand susan just got a little shock thats all...there are coloured tapes on it so he was wondering what it was for..he found out the hard way...lol...i just told my neighbour that its on coz her boys come through the back fence to my house..so they cant do that now.... he says I make him fat with all the cakes...lol...its not like I force him to eat them.... ;D i just bake them....i prefer home made cakes to shop ones anyway...i think they taste better...mind you I do love a coffee slice and you cant get them here..i always look forward to my mum coming coz she brings me a big box of them and i keep them in the freezer till i fancy one...might take one out now....lol......

God, All of these recipes sound so yummy. I absolutely love coffee cake, funny thing is I don't drink coffee. I have some lovely recipes for fillings for wraps. Must look them up and post them next time. I'm terrible, I can never remember recipees in my head, I have to have them written down.

God you lot really know how to put the scud on a girls good intentions to diet! My mouth is watering here and if it wasn't so late I think I'd be away to the bakery! I do a lot of cooking but it would all be savoury - I wouldn't trust myself to bake cakes and the likes as I'd be the size of a house! I have a seriously sweet tooth and have stopped bringing in biscuits (much to the children's annoyance) as I end up eating them myself!
Here is my recipe for the perfect roast beef -
Joint of meat (Rib Roast or Salmon cuts are best as they have the least fat) 1 large onion sliced Pinch of Season All Italian herbs 2 beef Oxo cubes crumbled over the top Salt and Pepper Soy sauce
Place the meat in an earthenware pot with a lid and add seasonings and flavourings. Fill the pot half full of water so that it partially covers the meat and then cover the top of the roast in Soy sauce as this gives it a beautiful sticky quality once it's cooked.
Cook slowly at 180oC for around three hours - turning the meat occasionally and adding more soy sauce as required.
I like to make this the night before so that as it sits any fat can congeal to the top and be skimmed off to add flavour to roast potatoes (which are done in the oven at 200oC in the fat from the meat and fresh garlic and Rosemary). The juices from this make the most delicious gravy which I make in bulk and freeze to be used again!
I'll be doing this with your recipe for Yorkshire puddings the next time Angie!

whats good about that receipe too jacqui is you can pop the batter into fairy cakes cases and make buns out of it...very handy for picnics & lunch boxes...... swop the coffee for cocoa and you get the choccie version too.....or vanilla essense...into the cake and the frosting..... ;D

Must say Angie I never thought of putting the oxo cubes over the top either. When I was up doing a few messages in town last week a women in one of the shops told me of this great idea with pita bread (lebanese breads etc the round ones they they use in the Kebab shops)...she sprinkles paprika all over one pops them into a pre heated moderate oven temp for about 5 mins ..takes them out (they should be rather crusty) breaks them up into pieces..like nachoes with less calories...fabulous idea!! I'm going to do some today with an equal amount of advocado/natural plain yogurt mixed together and lightly spread some of it on then sprinkle with some parmesan/paprika just for some extra flavour....could even use the shaved parmesan pieces ....yum, making myself hungry here...only half 7 in the morning...lol!...love the idea also Angie of making fairy cakes from the batter!

God yeah Angie - I use Oxo cubes in everything -Spag Bol, Meatloaf, Lasagne etc as it gives the meat an extra flavour and also thickens any juices! Crumbling Oxo over a joint of meat means that as the juices come out they are mixing with the cube hence the nice gravy!!
You can also get chicken Oxo cubes which I use when roasting a chicken - I cover the chicken in butter and mustard and then sprinkle on the Oxo which makes the skin crisp!
As you might guess I am never without these in my cupboard!!

Just thought to ask while were on the subject of roasting...how do you do your leg of ham on the top?? I score it across the top diagonally one way then the other, press in a few cloves and drizzle a mixure of brown sugar honey french mustard lather it over it actually and place thin slices of pineapple circles all over then drizzle more of the mixture again..sometimes finishing it with some cracked pepper and parmesan ..is there any other different methods you girls use for the hams? Do you keep it in the fridge in a moist calico bag afterwards?

ive used them in spag bol & stews but never sprinkle on top...i got a new box today and a nice big joint from the butchers...cant wait to do it tomorrow..im really looking forward to the gravy from it..will let you know how I get on fionnuala..... ;D this is how I cook my ham hannah. a nice big gammon joint 2 litre bottle of coca cola... put the bottle of coke into a big saucepan place the ham in it and boil as you would as if it was water....add half an onion for a bit of flavour...trust me, I know it sounds mad but its lovely....approx 1 1/2hr -when its cooked take it out out of the coke and place in a roasting dish and pour maple syrup on it and sprinkle with brown sugar and bake in the oven for about 1/2 hour...... my kids love this and ive never cooked ham the old way since doing this...even my sister travels from clare to here just to have my ham!!!!!!

I've heard of using coke with ham before but never used it Angie - must try it!
As far as my ham goes I boil it in a mixture of apple juice and pear cider and then make a paste to put over it to roast. The paste consists of brown sugar, honey, wholegrain mustard, sherry, soy sauce and spices. I place the ham on a wire rack in the oven and and have a baking tray beneath to catch the drips so that I can keep re spooning every twenty minutes for an hour. I then add pieces of sweetened stewed apple and leave it to cool (altho this usually ends up being a fruitless task as both Philip and the children love ham!!
Last christmas I mixed the honey mixture that was left on the baking tray with boiling water and gravy granules and a ham stok cube and made lovely gravy! I try never to waste meat juices as I think they make a lovely base for sauces or gravies.

I usually soak it first for about 12hrs changing the water inbetween then boil it....then i remove the fat and then score it criss cross and spread wholegrain mustard brown sugar and maple syrup and then add cloves put on wire rack and roast basteing it with cider then I make the gravy from the juices, I sometimes make this for sunday lunch and serve with parsley sauce and new potatoes.

This is my recipe for Meatloaf ladies.
1lb1/2 Mince 2 small onions Mushrooms Wholemeal breadcrumbs (3 slices bread) 2 tablespoons tomato sauce dash of worcester sauce Italian herbs Season All 1 beef Oxo cube 1 egg (to bind)
Bung all ingredients in together and then adorn gloves and squish together until well mixed. Transfer mixture into a greased loaf tin and cook in the oven at 180oC for approx 45 minutes or until fully cooked.
Once cooled upturn the tin and take meatloaf out where it can be sliced and accompanied with salad or baked potatoes.
This is really easy to make and a firm dinner favourite in our house!

I'm going up to granny's this morning here with a lock of Soda bread, pea & ham soup & some baked (kentucky duck style) chicken pieces..my godparents are away for about 10 days..so I've loosed myself into a cooking frenzy ;D

fionnuala the roast was a great sucess!!!!!and the gravy was gorgeous i had more spuds just to have the gravy with it...even the puddings came up lovely & crispy and great flavour...thank you so much..will def do that again...even the smell in the kitchen when we came back from mass was heavenly...the oxo cubes really made a difference...i do meatloaf as well without the mushrooms though..not all of mine like mushrooms and i had a bit of chef sauce too......
jacqui when you boil the ham in coke that cuts out all the soaking time...it takes most of the salt out..its a great time saver...plus it puts a lovely colour on the ham too....... ;D

Gonna try this next week,I did'nt make lunch yesterday..we went out for lunch as there was only the 3 of us,as AĆne was away,that is a great saver with the coke I hate that soaking and changing water carryon. I am gonna try the meatloaf on wed.

Hi Girls I just had to have a quick peek here!! All of the recipes look yummy. Angie I love coffee cake, but I'd be afraid to try it as I'd end up eating the lot myself!! I know I would LOL. This thread's not good for the diet!! Have any of you been collecting Easy Food magasine, it's monthly and the recipes are lovely and look pretty easy. I keep taking them out and looking at the pictures!! LOL. Actually I made a list of my favourite recipes but still haven't got around to actually making any of them. Hannah I'll have to practice before you come over!! Lord it's 5 past midnight already!! I'm off to bed, and I'll come back earlier tomorrow to catch up on the rest of the threads.
